Kathleen's of Dublin Irish Whiskey Cake
A family recipe...It’s the Irish oatmeal and a wee bit o’ good Irish whiskey that makes this cake so special! I served this wonderful cake every year for 18 years to customers on St. Patrick's Day when I owned m retail shop...Kathleen's of Dublin in Portland, Oregon. Sadly I closed the shop in 2011 but our family still enjoys this lovely cake and you can too. Enjoy!
To make this lovely and very Irish cake:
In a bowl ...
- 1 cup - McCann’s Quick Cook Irish Oatmeal
- 2 cups - Boiling Water
- Pour boiling water over oatmeal and set aside
In another bowl combine and beat well...
- 1 1⁄4 cup - Vegetable Oil
- 1 cup – Brown sugar, packed
- 1 cup – White Sugar
- Add 4 Eggs and beaten well and set aside.
In a third bowl sift together ...
- 2 1⁄4 cups – Flour
- 2 tsp – Baking Powder
- 1 tsp – Cinnamon
- 1⁄4 tsp – Nutmeg
- 1 tsp – Baking Soda
- 1 tsp – Salt
After sifting together above ingredients and add half to egg mixture and beat well.
Add remaining of egg mixture and beat well.
Add oatmeal mixture just until blended.
Add 1/8 cup – Irish Whiskey
Add 1 cup – Shredded Coconut to oatmeal mixture until just blended.
Pour into a well-greased and floured 9 x 13” baking pan.
Bake at 350 degrees for approx. 45-55 minutes.
Check if done by inserting a clean knife in center of cake, if it comes out clean, cake is done. Let cool and frost, we suggest cream cheese frosting.
